My baby girl has been eating dry porridge with grated carrots and mashed potatoes since 10months old till 1year old. In other words, that has been her lunch and dinner menu since then and she’s more or less forced to b Vegetarian.Thanks to the LAZY monster-in-law.
Yesterday, i decided to brave my confidence and buy a fillet of chicken and spinach. Thanks to many Halal recipes via others’ blogs, i have more or less gathered a vague recipe in my mind and even visualised how to get about cooking a nutritious porridge for my angel.Here’s what i did:
Boiled a small portion of chicken fillet. Once cooked,left to cool and i sliced to tiny chunks. With the chicken stock, i washed and boiled a handful of rice. Chopped garlic and small bit of ginger and dunked in the porridge. (Ginger and garlic has health boosters too.) Chopped Spinach to little bits and pieces.Diced potatoes. Once porridge is half cook, add potatoes. A sprinkle of salt to taste so she can enhance her tastebuds and appetite too. Once almost cooked, i added spinach and chix. Voila, the smooth,runny Chicken Spinach Porridge for little angel.She sat obediently without the help of the walker and after every spoonful, she muttered,”Nakk” meaning “want”. Imagine how joyful and fulfilling i felt as a mum who is responsible to give her proper food..
Monster in law then hinted to my hubby,”When are you going to buy the red fish?So i can cook fish porridge for her.She cant be eating vegetables everyday.” i m glad my actions yesterday opened up her eyes and coz some jealousy in her..so she would be looking for innovative ways to cook nutritional porridge and would demand more money frm us so she can buy the stock etc..
So proud of myself.Finally did the right thing in changing my daughter;s diet.she need meat and fish in her daily intake cos she is growing,dammit.Next, i will look for more recipes involving egg tofu and other tasty ingredients..
